Blackberry & Banana Oatmeal Breakfast Muffins
(NO flour NO sugar!)
Here’s a simple recipe for those early mornings, or late starts when you just don’t have enough time to get your breakfast fix! These are also a perfect treat for your kids lunchbox and super easy to make. This healthy recipe has no added sugar, no flour and the banana and blackberries keep them nice and moist on the inside! BUT you can make these muffins with any kind of fruit you like, such as blueberries, dried cranberries, diced apple, walnuts and raisins, apricots, coconut… Mix it up to keep them exciting!
Makes: 12 muffins
Preparation time: 25 minutes
Ingredients:
- 1.5 cups of oats, blended up into oat flour
- 1 cup of rolled oats (not blended)
- 2 large eggs, beaten
- ⅓ cup of honey
- ¾ cup of milk
- 2 tsp vanilla essence
- 2 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 1 large overripe banana, mashed
- 1 cup of blackberries
Combine oat flour, eggs, honey, milk and vanilla essence and mix well until smooth. Add all dry ingredients and fruit and mix until all ingredients are properly combined. Scoop into muffin tray (line with butter and oat flour to stop the muffins from sticking) and cook for 20 minutes on 180 degrees. Prick at 20 minutes to check if the muffins are cooked all the way through and enjoy!
