Healthy Easter Chocolate Protein Balls

These protein balls are delicious, and a great burst of energy right after a workout or as a snack with a cup of tea. They’re full of good health fats and slow carbs, which will give you longer lasting energy and keep you feeling fuller longer. They’re a perfect replacement for those naughty sugary easter eggs you might be tempted by this weekend!

Ingredients:

5 medjool dates
1 cup oats
2 tablespoons chia seeds
½ cup almonds
½ cup walnuts
1 tablespoon organic protein peanut butter
1 tablespoon honey
2 tablespoons raw cacao powder
(optional: 2 tablespoon of coconut oil)

Directions:

Add all dry ingredients, including dates to a food processor and blend until fine. In the microwave melt the peanut butter and honey, mix well. Add the honey and peanut butter to the dry ingredients and mix well. If you find the mixture is too dry, you can add a little coconut oil. Roll into 1.5 inch balls and refrigerate.
