Zucchini Lasagne
Here’s one for the pasta and lasagne lovers.. I love replacing spaghetti and lasagne sheets with zucchini, it’s like your brain plays a trick on you! It tastes like you’re eating pasta, but without that sluggish over-full feeling over those heavy carbs! It’s quite simple, all you need is a healthy bolognese sauce and a zucchini shaved into thin slices, oh and some cottage cheese as a white sauce replacement. This dish is a good source of protein and a good option for gluten free lovers.
Serves: 4
Preparation time: 30 minutes
Ingredients:
- 1 onion, cut into small squares
- 2 garlic cloves, chopped finely
- Half a capsicum, cut into small squares
- 2 carrots, cut into small squares
- Handful cherry tomatoes, slices in halves
- 1 zucchini, sliced into long fine lasagne sheets (I use a peeler to get them nice, thin and long)
- 1 can tomato paste
- 1 tsp paprika
- 1 tsp italian seasoning
- 1 tsp chilli flakes (if desired)
- ⅔ cup cottage cheese
- 500g of minced beef
Cook onion, garlic and mince until the mince is done. Add vegetables and herbs, let simmer for at least 5-7 minutes. Add tomato paste and diced tomatoes and let simmer for a following 5 minutes. Once the sauce is ready begin the layering with the sauce, followed by the finely sliced zucchini, cottage cheese and repeat. Bake on 180 degree for 15 minutes.
